We are the third generation of livestock farmers at Pajaretillo, a 475-hectare farm stretching across Jerez de la Frontera and San José del Valle, right up to the gates of Los Alcornocales Natural Park in Cádiz, Andalusia.Pajaretillo is a farm with a long history, having the oldest known cartographic record dating back to the 16th century. In 1958 it was acquired by our family, and over three generations we have preserved its name to this day, honouring centuries of history.Since 2015, we have transformed the farm, previously degraded by intensive traditional agriculture, into a sustainable model. In 2018, we adopted holistic management, a regenerative agricultural approach that ensures animal health and soil regeneration.We combine tradition and innovation to regenerate our soils and produce high-quality meat, respecting animals, soil, and people.Our farm is an open and educational space. We train professionals and offer regenerative tourism experiences, promoting values of respect towards nature and sustainability.We aspire to change regenerative agriculture and livestock farming from being the exception, to become the norm.We invite you to visit us and be part of the change toward a sustainable future.

At Pajaretillo, we believe our work would not be complete if it were not shared with others. Our meat comes from free range animals, fed on natural pastures in a relaxed environment. Our organic and regenerative produce is 100% natural, nutritious, and free of additives.We care for each animal, respecting its natural cycles and herbivorous diet, resulting in superior-quality meat. Through genetic selection, we seek out a continuous improvement, aiming to develop our own breed, the “Pajaretilla-Mediterranean,” well adapted to the region’s climate and suited for producing the highest-quality meat.A large number of studies have shown that grass-fed meat is more nutritious, with an optimal balance of omega-6 and omega-3, rich in antioxidants and vitamin E compared to industrial and even organic meat.In addition to its health benefits, thanks to holistic management, this type of meat is not only beneficial to consumer but also the planet by helping retain & capture carbon, increase water retention & infiltration, and promote local biodiversity.Every bite represents health and sustainability.
We produce meat in an artisanal, organic, and regenerative fashion. It is 100% natural, nutritious, and free of additives. It could be called “signature meat” due to its exclusivity and rarity in the market.We value the growing number of consumers of grass-fed meat who care about their health and that of our planet.Production is limited, which is why we work with a pre-sale model, slaughtering animals only when all parts are sold. MANUEL TROYA CANTOS (center): Belongs to the third generation of livestock farmers in his family. Trained as an industrial engineer, he decided to leave the city and work in the countryside, in the family livestock business. He is responsible for transforming the farm, shifting from traditional management to the current holistic and regenerative model.
CÉSAR HUELVA MANRIQUE (left): An agricultural engineer specialising in regenerative management, adapted livestock farming, and key line and design. He has been working at Pajaretillo since 2023 and, working closely alongside Manuel as they plan the farm’s management.
DARYUSH BERNAL COATES: Studied forestry and environmental management, with a prior background in permaculture. He help sout in all aspects mainly working with the cattle & its management and the syntropic plantation maintenance. Looking to integrate regenerative and sustainable work as a way of life in harmony with nature.
MARIA BRAUN: Joined the team in 2025 with a background in gastronomy, regenerative agriculture and project management. Together with Manuel, she is focusing on developing training and events, building collaborations, and supporting the sales of our regenerative meat, strengthening the connection between the farm, its products, and people.Would you like to join Pajaretillo?
